El Silencio (Familia Torres)

El Silencio is the Torres family's extra virgin olive oil from the Aranyó estate in Les Garrigues, Catalonia. It is made only from Arbequina, from olive trees more than 400 years old, and sold by Torres Import, the family's food export company.

The olives are picked by hand from mid-October to late November, taken straight to the mill and cold-extracted by mechanical means, with acidity below 0.2%. The taste brings artichoke, almond and tomato, sweet at first with a bitter, peppery finish.
