Hilandar wines are made by the monks of Hilandar, the Serbian monastery on Mount Athos founded in the late 12th century by Stefan Nemanja and his son Saint Sava. The winery was rebuilt and enlarged after a fire in 2004 and occupies a stone building with cellars dating from 1734.
The main vineyard, St Sava's Field (Savino polje), covers about 17 hectares and climbs from the Aegean up the slopes. It is planted with Merlot, Cabernet Franc and Cabernet Sauvignon, and the grapes are picked by hand. Falstaff gave the 2018 Hilandar Red 92 points.
